Bosky Acres Goat Cheese – Michele and Matt Lamb – Waxhaw, NC

Matt and Michele work to give their animals a healthy environment with lots of fresh air, pasture and room to browse. Uno Alla Volta Cheese

Italian for “one at a time” describes the spirit in which these exquisite cheeses are lovingly produced. Charlotte-based cheesemakers Zack and Victoria Gadberry make fresh Ricotta, Mozzarella and Burrata (all of which can be found on our menu) every day, using milk from Holton Hollow Farm – a small dairy farm which they recently helped revitalize with a Kickstarter fund. The cheese speaks for itself…it will blow you away. Come try it at 300 East, or purchase UAV products at Matthews Community Farmers’ Market or Charlotte Regional Farmers’ Market on Saturday mornings. UAV products are also available at Pasta & Provisions, Earl’s Grocery, Greeneman Farms booth at the Atherton Market, and Ferrucci’s Italian Market.
